Meal in a Pumpkin
Found this recipe in a ward cookbook and it has become a family favorite.

| 1 1/2 | lbs | Ground Beef |
| 1/3 | c | Green Pepper |
| 3/4 | c | Celery |
| 3/4 | c | Onion - chopped |
| 1 | tsp | Salt |
| 1/4 | tsp | Pepper |
| 1/4 | c | Soy Sauce |
| 2 | Tbsp | Sugar - Brown |
| 1 | can | Cream of Mushroom Soup |
| 2 | c | Rice - cooked |
Using a sharp knife, cut lid from pumpkin. Scoop our pumpkin seeds and excess membrane with scraping tool.
In large skillet, combine ground beef, green pepper (chopped), celery (chopped), and onion (chopped). Cook over medium heat until ground beef is browned. Add remaining 7 ingredients to skillet. Mix well and place in pumpkin cavity.
Place lid on pumpkin. Place on foil-lined baking sheet. Bake at 350* for 1 1/2 hours.
To serve, scoop out part of the baked pumpkin along with meat mixture onto each plate.
You can decorate the pumpkin using toothpicks after it's cooked. Olives for eyes, carrot for nose, whole cloves for mouth. Parsley around the top makes great hair.
